At this time of the year Winter starts to recede and Spring starts to unfurl from the earth with the beautiful colors of green spreading slowly. At the same time most people are hungering for the sun and the warmth that is soon to come but me, I hunger for what Spring has to offer in the form of food. Not the kind of food that comes to the markets in the Spring, the type of food that you have to go out and find, better known as wildcrafted. One item that comes from gathering once the temperatures start to come above freezing is maple syrup. Gathering the sap and boiling it down to make syrup is very common in the Northern USA and and just takes a bit of elbow grease. All types of maples as well as Hickory, Sycamore and Beach trees can produce delicious syrup so don't just write off the rest of the trees on your property just because they aren't Sugar Maples. You should identify the trees that you want to tap in the fall when they still have leaves so in the Spring they are easy to find.

The tools you need to produce syrup at home are very simple. Stainless steal spouts are tapped into the bark of the tree and are cheap and simple to purchase online. These spouts come with hooks to hang your bucket on and what is easier to come by than plastic ice cream buckets. Just save your buckets during the year or check with your ice cream eating friends and you will have plenty to collect the sap. You will cut a small opening in the lid of the bucket for the sap to run into without collecting anything else that is unwanted. You should collect the sap from these buckets each day and store (no more than a week) it some place cold like your refrigerator until you are ready to boil it down. Remember that 10 gallons of sap will make one quart of syrup. Do not collect sap once the temperatures stop going below freezing or the trees begin to bud. The sap can be boiled inside or outside but always be careful of with fire and the amount of steam you produce could possibly remove your wallpaper so be aware.

Choose a large pot with a wide bottom and fill it only ¾ of the way with sap so it will have room to boil. When the sap has been reduced to at least half add more sap but add it slowly as to not stop it from boiling. Once the sap has taken on a golden color but is still very watery move to a smaller pot that you can cook easily on the stove top. This time you will boil it until it takes on its syrupy consistency and will coat the back of a spoon. Watch it carefully as it approaches this stage because it could boil over quickly. Before you store your Syrup you will want to strain it through a coffee filter once it has cooled. Store in a sterilized glass bottle or jar and should be refrigerated or frozen to extend its shelf life. Considering the incredible flavor of real Maple syrup this is not really that much work and I highly suggest you try it at least once at home.

My wife, Cara, and I were preparing a variety of snacks to set out on the deck for some friends who were going to drop by one evening, when I remembered a snack I used to crave for days on end one summer years ago. Pushing back a cold Fat Tire I was drinking at the time, I rummaged through the kitchen fridge to see if I had the ingredients for it. All that I needed was here; chipotle flavored cream cheese, popcorn shrimp, tobasco sauce, grape tomatoes, and paprika. I had Club Crackers and Triskets in the cabinet, so I was set to go. Geez, this dip went back to the 80's, but if it was good then, it surely had to be good today.

I set up the ingredients; still a few hours before our friends were to arrive, so plenty of time to chill the dip before our gathering. The dip is so good it's a wonder I dropped the idea of it so many years ago, and the original recipe is so simple that it's just not worth fooling with.

Ingredients:

16 oz. softened chipotle flavored cream cheese.
1 cup popcorn shrimp or crab meat, chopped.
Dash of paprika
1 cup grape tomatoes, chopped.
Splash of Tabasco sauce
Dash of Parsley

Stir the cream cheese until soft. Mix in the popcorn shrimp or crab meat and grape tomatoes. Splash in a little tobasco sauce (be careful, too much will ruin the flavor) and the paprika and blend well. Pour contents into a serving dish and sprinkle with parsley.

Chill for about 2 hours. Serve with Club Crackers or Triskets, or your own favorite cracker.

As expected the dip was a success. We sat around on the deck with the Cream Cheese dip, a spinach dip, and a hot cheddar cheese dip, a bucket of crackers, and the Fat Tire. The conversation flowed till around midnight.

    The Canvas Transfer Process

    Producing a canvas transfer is an intensely detailed process, which begins with an art print (ink on paper). Special chemicals are applied which, when dried, form a film that is meticulously separated from the paper and permanently embedded onto a high quality artist canvas. The canvas is then carefully stretched and wrapped around a sturdy, custom-cut inner support frame, called a "stretcher bar". Added brushstrokes are also carefully painted on to the canvas.

In late summer, the flowers ripen into many-seeded blue berries. The high-bush blueberry, V. corymbosum, the velvet-leaf blueberry, V. myrtilloides, and the low-bush blueberry, V. angustifolium, are most commonly found in eastern woodlands, from Nova Scotia south to Georgia and Alabama and west to Wisconsin. They can grow successfully in conditions ranging from swamps to dry upland woods. All three have been cultivated for garden enjoyment, and hybrids from these species are some of the best-bearing, winter-hardy blueberry shrubs offered for gardeners across the country.

    Traditional uses:

    Uwada'hio'ni' - "plenty of berries" - is the Cayuga term for late summer when ripe berries abound, especially the delicious blueberries. The Oneida called blueberries and huckleberries "the early berries," uhia'dji' niyuhu'ndagwaha, and picked them in great numbers, collecting them in berry baskets. To help preserve the tart wild fruits, they lined their wood-splint baskets and bark buckets with large basswood leaves or fern fronds. Tribal people in the Northeast also used aromatic sweet-fern leaves and hay-scented fern fronds for this purpose. In years of abundance, berries were dried, and even smoked, to preserve them. Some were mashed into berry cakes and dried on large basswood and sycamore leaves in the sun or beside the fire, to be rehydrated later in soups, stews, or hot maple syrup water.

    Native people drew benefits from blueberry shrubs well beyond the season of ripe fruits, collecting the small mature blueberry leaves before they reddened and fell from their shrubs in autumn. Blueberry leaf teas are mineral-rich astringents that were used to wash the skin and hair. They were also drunk to prevent the formation of bladder or kidney stones. Many tribes considered the blueberry leaf teas to be "blood purifiers" because of the tonic effect on the general digestive system. Algonquian Indians used blueberry leaves in teas to treat colic and stomach cramps and painful menstruation, as well as to aid uterine contractions during childbirth. Dried leaves were smudged and burned in kinnikinnik mixtures (and alone), and the smoke inhaled to clear congestion and treat nosebleed.

    Modern uses:

    Blueberry leaf tea continues in use as a diabetes treatment, esteemed by many native herbalists, and also to treat bladder and kidney complaints. Its diuretic and astringent benefits make it a valuable choice for relieving urinary tract infections. This tea is also a helpful gargle to soothe swollen glands, sore throats, or mouth sores, and strong blueberry leaf teas (decoctions) are valued as antiseptic skin washes and to treat everything from poison ivy rashes to muscle cramps and insect and spider bites.

    Along with huckleberries and bilberries, blueberries contain valuable compounds called anthocyanosides and arbutin. The first helps to treat, and even prevent, cataracts as well as aiding general eyesight; and the second helps to treat yeast infections. Some studies show that eating these berries in moderation helps to protect the stomach against ulcers by strengthening the stomach lining. Blueberries' compound oligomeric procyanidins (OPCs) have anti-inflammatory benefits that may relieve some symptoms of multiple sclerosis. The dried fruits have concentrations of their inherent tannins and pectin, making them valuable treatments for diarrhea.

    Blueberries are high in vitamin C and are favored as healing antioxidants.

    Growth needs and propagation:

    Most blueberry shrubs thrive in sandy or peaty acidic soils, though some will do well in moist rich earth. As acid-loving perennials, most varieties will perform best if fed a soil acidifier. They prefer full sun or open shade for healthiest growth.

    It is best to have at least two or three blueberry shrubs in the medicine wheel garden to assure good cross-pollination for maximum fruits. Plant them two or three feet apart, depending upon size and species, and set them in a small triangle. Excellent new hybrid varieties that bloom and bear fruits early to late in the season are available, as well as fine dwarf low-bush (about eight inches tall) and stunning high-bush varieties (about three to four feet tall).

    Velvetleaf blueberry, V. myrtilloides, makes a colorful show in the garden in autumn, when its oval, velvety leaves, which can grow two inches long, turn vibrant red. This low shrub favors moist, acid soil and will grow up to three feet tall and develop a dense root system. If allowed to, it can generate a colony of numerous additional shrubs.
